Soluble in water, >50 °C mineral oil and ethyl acetate; insoluble in cold water. It decentralizes in warm water, and it is anti-acid and heat resisting. The HLB value is 4.7.

Firstly it should be dispersed and dissolved in warm water, then mixed with other materials. It is usually used with emulsifiers like sucrose ester, tripolyglycerol monostearate and so on. It is used as emulsifier and dispersing agent, and employed in the production of milky candy, ice cream, bread, cake, chocolates, and coffee. It is also applied in the cosmetics, medicine, pesticides, coating and plastic industry.
